A new addition… Scalloped potatoes and ham :)

Ha!  I bet the title of this post got you all excited, huh?  Well, I AM going to add another category to this blog, so that I can keep a “virtual recipe box” for my kids and husband, so that NO ONE goes hungry if I happen to be away or dead.  HA!  Just kidding.  Anyways, here’s the first one…  Scalloped potatoes with ham.  We just had this one tonight, and it was OH. SO. GOOD.

I like to start with instructions and will then give the precise measurements at the end of the post.

Preheat oven to 400 degrees

First, you make a cheese sauce (I use the same sauce for my baked mac and cheese).  Saute the onion and butter on medium heat until onions are soft.  Add the flour and make a rue (fancy, huh?).  Gradually add the milk and stir frequently until the sauce thickens and begins to boil.  Add the cheese and stir until melted.  When the sauce is generally smooth, add the ham.

Thinly slice 3 large potatoes and one medium onion and layer them in a greased 13×9 baking pan.  Spread the finished cheese sauce on top and sprinkle with additional cheese if desired.  Cover pan with foil and bake for 35 minutes.  Check the doneness of potatoes after 35 minutes and add 5 minutes if you like softer potatoes.  Uncover pan and bake for additional 10 minutes.

Scalloped Potatoes with Ham

3 large potatoes

1 medium onion

****Cheese sauce:

Diced onion (I just used some of the medium onion I got out to layer with the potatoes)

3 TB butter

2 TB flour

2 cups milk

1 8 oz block of cheese (I used swiss and WOW, but you can use your favorite)

1 tsp black pepper

Dash of salt

Ham chunks (or anything else you think goes well with cheese and potatoes)
